Food

Roti, pom, Javanese plates, peanut soup, and the Central Market. Eating is the clearest way to understand the city.

Surinamese cooking is several kitchens in one city. Hindustani roti and bara, Creole pom and peanut soup, Javanese nasi and bami, Chinese dishes, and Indigenous and Maroon staples such as cassava all have a place. A visitor does not need a checklist. Order what the kitchen is known for.

The Central Market is the morning assignment: fruit, fish, herbs, and the noise of a working market. Warungs and roti shops do the rest of the day. Pom, when it is on the menu, is a Creole oven dish built around pomtajer. Bakabana, fried plantain with peanut sauce, is the snack people actually eat.

Outside Paramaribo, meals follow the lodge or the host. On the river, expect simpler food and fewer choices. That is not a gap in the trip. It is the trip.
